And, yes, it has to do with how it's handled and prepared, for the most part. While the majority of fish are kosher, there are some that are not (swordfish and catfish, just to name two). So while most sushi *could* be kosher, not all sushi is kosher.
Does it have to be a kosher kitchen too, or is it assumed kosher if it's not one of the proscribed fishies or shellfishies?
I love learning about this stuff...thanks so much for not minding silly questions. :) I'm not *that* many generations from a strict Orthodox background!
